Go to Wallpaper & style and then Colors to find the updated options.
You can pick between Neutral, Soft, Bright, and Bold colors. Additionally, there’s the “Select a color” slider to determine the system accent.

The last Android Canary build introduced increased blur across the system UI that was then added to Android 17 QPR1 Beta 3. Hopefully, there’s a similarly fast turnaround time.
